After harvesting, fresh tea leaves undergo a series of carefully controlled processes, each requiring precision and expertise.
The journey begins with withering, where the leaves gradually lose moisture under carefully monitored conditions. This softens the leaves and prepares them for the next stage while preserving their natural qualities.
Next comes rolling, a crucial step that gently breaks the leaf cells, releasing essential oils and flavor compounds. This is where the tea begins to develop its distinctive aroma and character.
The leaves are then roasted to halt natural oxidation and enhance their aroma and flavor. Temperature, roasting time, and technique must all be carefully controlled, as even slight variations can significantly influence the tea’s final profile.
Finally comes the art of tea blending. By combining teas from different origins or harvest seasons, skilled tea masters create a signature balance of aroma, flavor, and body. Blending is not simply following a recipe—it requires experience, careful tasting, and a deep understanding of each tea’s unique characteristics.
